The standards for the production of lyutenitsa are already a fact. It remains a mystery what exactly we have spread on our slices so far, but for several days on the market you can find lyutenitsa, in which the use of dyes and preservatives is not allowed.
From last week in the shop windows you can find 2 types of traditional Bulgarian lutenitsa - finely ground and coarsely ground, made entirely by industry standard.
Only pepper, pepper puree, roasted peppers, tomatoes, tomato paste, eggplants, carrots, refined sunflower oil, potatoes, potato starch, corn starch, sugar, salt, spices and drinking water are allowed for the production of the already standardized products of generations of Bulgarians..
In the lyutenitsa, which we hope will 100% resemble the taste of the grandmother, it is not allowed to use more than 1.7 grams of salt per 100 grams of product and, as we have already said, no preservatives or colors.
You will find quality lutenitsa in glass jars or in other packages that are suitable for pasteurization and sterilization. All are closed with twist off caps, which guarantee the quality and safety of the products.
Pay attention to the label of the lutenitsa according to the standard, where you will find a printed logo of the industry standard, which certifies that the product is manufactured in accordance with the requirements of the standard.
At the moment on the domestic market you can find jars with the red appetite from 5 companies, whose production is by industry standards.
The products can be found in the retail chain throughout the country. Since the beginning of the year, more than 100 tons of lyutenitsa have been produced as standard.
Currently, the Bulgarian Food Safety Agency strictly controls all enterprises approved and meeting the requirements to produce products according to standard:
- Approved standard for meat products "Stara Planina";
- BDS for dairy products;
- Approved standard "Bulgaria" for bread and flour;
- Industry standard for lyutenitsa.
The industry standard for lyutenitsa was developed in a working group between experts of the Bulgarian Food Safety Agency, Union of Fruit and Vegetable Processors, NDNIVMI, Institute of Canning Industry - Plovdiv, University of Food Technology - Plovdiv, experts technologists from processing companies, as well as and experts from the National Center for Public Health and Analysis at the Ministry of Health.
