The quality of the native beer will be monitored more strictly thanks to a new development, created jointly by the Center for Food Biology at Sofia University. Kliment Ohridski and the Institute of Cryobiology and Food Technology.
The Union of Bulgarian Brewers welcomed the innovation and said they were ready to put it into practice when it is fully completed.
It is a special digital inscription on each bottle of Bulgarian beer. The inscription will be unique for each brand and will show the quality of the ingredients before we drink the sparkling drink.
All kinds of substances can be identified, even to the point that the location of a factory can be determined, the individual varieties of barley, hops can be identified, different strains of brewer's yeast can be differentiated and identified, associate professor Silvia Mileva told Bulgarian National Television.
However, the Center for Food Biology is still looking for a way to differentiate beer brands.
For now, information is being accumulated and entered into a database, which will show the characteristics of each brand with the help of magnetic resonance imaging.
The studies have not yet been completed, but at the end of the study it will be possible to draw a typical handwriting of each individual Bulgarian beer.
If the method is approved and introduced for Bulgarian beer, it will become the first with a digital signature in Europe, experts say.
Until now, such a development has been used only to evaluate honey in our country, but it is believed that the same methods can be used in beer and wine.
