In fact, very few people know that the ancestor of the modern carrot, which is found in every household, was actually a completely different color - purple.
Drawings made two thousand years before our era in an Egyptian temple depict a purple carrot. During ancient culture, the Romans and Greeks used carrots as a medicine, but not as a food product.

In the tenth century, purple vegetables were cultivated by the people of Afghanistan, Pakistan and northern Iran. As early as the thirteenth century, varieties of carrot in white, green and even raspberry color were imported into Europe. There were also red and black carrots.
Carrots, as we know them, originated in the Netherlands in the fourteenth century, using mutations in the seeds of North African yellow carrots. Breeders have worked for two hundred years to reach today's orange color.
We have known since school that the orange color of carrots is derived from carotene. It is a yellow-orange plant pigment, existing in four forms.
The most useful of these is beta-carotene, which is an antioxidant, slows premature aging, reduces the risk of cardiovascular disease and the risk of cataracts.
It is especially recommended for use by people whose profession is associated with visual impairment - drivers or those who work mainly with a computer.
