The best varieties of cherries are: May 11, Early Black Large, Bigaro Moro, Biagro Burla, Bing and Van.

Early black large cherry is a variety of Bulgarian cherry. The period of fruit ripening is May 25 - June 5. The fruits are large, thin and not very long stalk, the fruits have a heart shape, the skin is dark red, thin but strong. Their taste is sweet - sour, the fruit is easily separated from the stone, the fruit has a dark red color. This variety does not have a strong aroma, but the appearance of the fruit is wonderful. The variety ripens relatively early and has good taste qualities.

The May 11 variety ripens earlier around May 10 to May 16. Its origin is not clear. The fruits are heart-shaped, small in size, with a short stalk and almost black skin when ripe. The fruit has a sweet-sour taste, dark red color, soft and juicy, the stone is small and does not come off easily.

The French variety Biagro Byurla ripens in the same period as the Bulgarian variety Early black large cherry, ie. from May 25 to June 5. There are sweet and sour fruits, heart-shaped, dark red and large. This variety is self-fertile and uses pollinators such as Napoleon and Hedilfingel cherry.

Another French variety is Bigaro Moreau. The ripening period is the same as with Biagro Burla. The fruits are dark red, large, heart-shaped, sweet-sour taste. This variety is also self-fertile and uses the appropriate pollinators Napoleon and Early Black Large Cherry.

The American variety Bing ripens earlier than the last two described varieties. The ripening period is from 17 to 25 June. The fruits have a sweet and sour taste and thick flesh. Its color is politely red to black and they have very good taste qualities. This variety is also self-fertile and suitable pollinators are Rainier and Van. The Bing variety is very common in Bulgaria.

The Van variety ripens from June 20 to 30 and has excellent taste. There are globular fruits with a dark red color, sweet crispy flesh and large fruit. This variety is also self-fertile and suitable pollinators are Napoleon and Bing. The Van variety is also very common in Bulgaria.
