Necessary products: 1 kg of flour, 250 g of sugar, 250 g of butter, 25 g of non-dry yeast, 250 g of fresh milk, 7 eggs / one yolk is for spreading the Easter cake /, the peel of 1 lemon, 1 vanilla, 1 s l. rum or cognac.

Mix the yeast with 1 tsp. sugar and 1 pinch of salt, add warm milk, but not the whole amount. Add a little flour and mix this mixture to obtain a slurry. Cover with a towel and let the mixture rise. You will know that it has risen when it increases its volume about three times. Stir it and let it rise once more.

Sift the flour into a pan that has been preheated. Heat the remaining milk with the sugar until it is completely dissolved. Beat the eggs and rum and add the vanilla. Melt the butter in a separate bowl, but be careful not to start frying.

Make a well in the sifted flour and with constant stirring add first the beaten eggs with rum and vanilla, then the milk, butter and finally the yeast mixture, which we prepared first. Knead this mixture until it is completely homogeneous. The dough you get should be soft, warm and not sticky.

Smear the surface of the table with a little oil or melted butter and start beating the dough in it with strong blows. The whole dough should become bubbles that you will easily see.

When the bubbles come out, grease the dough with oil and leave it to rise in a preheated oven. Cover it with a towel. When it triples in volume, you need to mix it again with a little oil.

Divide the dough into three equal parts, from which rolls about 50 cm long are formed. Knit them in a braid, joining them by pressing. If you wish, you can put raisins on top.

Put the Easter cake in a greased pan and let it rise again. Brush it with egg yolk and sprinkle generously with sugar. Bake in a moderate oven. Remove the Easter cake from the pan when it has cooled slightly.
