Only a few decades ago in Bulgaria we had never heard of sushi, and the lucky ones who tried this unique Japanese specialty consumed it only abroad or were looking forward to acquaintances to send it to them by plane.
Yes, today this sounds quite funny, but the truth is that even after the opening of the first sushi bars or restaurants in our country, their prices were so high that few people have the luxury of consuming sushi in them.
As well as the idea to prepare sushi themselves, the products for making it were not available in the commercial network.
But all this is over. We can safely eat sushi at affordable prices, as well as prepare it at home.
Mentioning homemade sushi however, it turns out that many housewives encounter problems, and no matter how hard they try to impress their family by serving sushi at the table, their attempts are unsuccessful. And the biggest secret to making the perfect sushi lies in the processing of rice.
In practice, to make a nice sushi, you can use any type of rice, but only when you already feel very confident in your actions in the preparation of sushi. Until then, we recommend that you work with either Shari rice or one that explicitly states that it is intended for sushi.
Once you have chosen the rice to be cooked, it is good to know that as a rule 1 tsp. rice is enough to make 3 sushi rolls. In case your family is large or you plan to invite guests, then use 2 tsp. rice, which would be enough for 6 sushi rolls. As much as the standard package of Nori seaweed contains.
The rice is washed very well in a colander under running water. It is best if it is neither hot nor icy, but lukewarm. The longer you wash the rice, the better you will avoid sticking the grains.
After washing the rice, you must allow it to drain well, and the period for this must be at least 30 minutes.
At 1 tsp. rice is added 1.15 tsp. water, and the container you use to cook the rice must have a non-stick coating.
After the water boils (about 2 minutes), immediately reduce the heat to the lowest setting, but without removing the lid of the pot. Leave for about 10-12 minutes, then turn off the stove, but do not remove the dish from it for another 10-15 minutes.
We move on to the other essential part of the perfect sushi rice, which consists in preparing a mixture of rice vinegar, sugar and salt.
It is good to warm the vinegar a little so that all the ingredients can mix well. There are different proportions for the preparation of this mixture, but most experts recommend for 1 tsp. rice (raw) to mix 35 ml of rice vinegar, 1 tsp. salt and 1. 5 tsp. sugar.
Sprinkle the rice with the prepared mixture and mix it carefully with the help of a wooden spatula. Wait a few minutes and you can now safely start with the subsequent activities of preparing sushi. The main secret to make it perfect has already been revealed to you!
