The World Treasure of Tastes is a unique world culinary catalog, which includes food products whose taste and composition is a world treasure and must be preserved at all costs. The chefs define it as the "Red Book" of the most valuable culinary pearls.
Bulgarian cuisine already participates with four "superfoods", which glorify the rich taste and aroma of traditional Bulgarian cuisine. Another 20 traditional Bulgarian dishes are in the process of identification.
The specialties that enter the World Treasury of Tastes are identified not only as a list of products and techniques of culinary processing.
They reveal in detail the geographical region for which they are characterized, the specific natural conditions of the place, as well as the way of obtaining the products and ingredients.
The Bulgarian "excellents" who occupy a worthy place in the treasury are the Smilyan beans, the green cheese from the village of Cherni Vit, the Bansko-Razlog nafpavok and the milk from the only Karakachan sheep of its kind in the world.
The taste qualities of the giant bean with chestnut aroma are well known not only in Bulgaria but all over the world. A company in the prestigious ranking makes him the moldy green cheese from the village of Cherni Vit, which has no analogue on the Balkan Peninsula.
A special place is given to a miracle sausage with the strange and untranslatable name nafpavok. The name of this unique delicacy comes from the Bansko-Razlog dialect verb "nafpavam" - translated as stuff.
Nafpavok is characterized by a specific aroma of well-ripened meat, earthy notes, light spiciness and deep sweetness. For its preparation only the best meat of the pig is used (obligatory home-grown), which is chopped, seasoned and stuffed in the duodenum (the so-called grandmother or babek), in the bladder or stomach (grandfather).
But even if the locals reveal all the secret spices to you, you will still not be able to prepare Razlog nafpavok anywhere else, because the secret of its specific aroma and taste is in the unique climate of the beautiful Razlog valley.
Bulgarian cuisine abounds in incredibly fragrant and delicious delicacies that can compete with our exquisite dishes from around the world.
The Kurt Gate, the extremely tasty pink tomato "buffalo heart", as well as several specific varieties of apples and pears are expected to be added to the Treasures of Tastes in the near future.
We cannot miss the pear honey, which is produced in the region of Provadia and Kotel, as well as the "poor cheese", which is produced in the Pazardzhik region from already skimmed milk.
We have not forgotten the famous Bulgarian pie, but not the one that most of the hosts prepare, but the Teteven "old-fashioned tocheno", which is characterized by unique technology and taste.
