Stuffed rabbit covered with bacon
Necessary products: 1 rabbit, 1/2 cup rice, 1 onion, 150 g mushrooms, 100 g butter, fatty bacon, cut into thin slices, 3 cups water, 700-800 g potatoes. For the filling, add salt, pepper and savory, and on the potatoes - whatever spices you want.
Method of preparation: The entrails of the rabbit are washed, cut into small pieces and stewed in oil. Fry the rice in a pan with the finely chopped onion. Add the chopped mushrooms and stewed entrails. After frying everything lightly, pour 1 cup water, all spices and salt to taste. When the water boils, the mixture is ready. Fill the pre-washed rabbit with this stuffing and sew with thread. Separately, peel and slice the potatoes in whatever shape you want. Season to taste.
Put a few potatoes on the bottom of a greased pan, on which you will put salted and greased with butter and paprika stuffed rabbitso as not to burn. Arrange the remaining potatoes around it, and if you have leftover stuffing, you can put at one end of the pan and from it. Cover the rabbit itself with bacon so that the meat does not become too dry. Add 1-2 glasses of water depending on the size of the pan. All this is baked under a lid in a preheated oven at 220 degrees.
Stuffed rabbit with minced beef
Necessary products: 1 rabbit, 400 g minced beef, 2 finely chopped carrots, 1 grated onion, 250 g finely chopped mushrooms, 150 g breadcrumbs, salt, 100 g butter, 700-800 g potatoes, paprika and black pepper taste
Method of preparation: This recipe differs from the previous one only in its filling and in that you do not cover the rabbit with bacon, but spread it only with butter, salt and red pepper to taste. In a pan fry the finely chopped onions and carrots and add the minced meat. Finally add the mushrooms, breadcrumbs, spices and a little water. After it boils, you can fill the rabbit with the stuffing prepared in this way, and distribute the potatoes around the rabbit itself.
Stuffed rabbit in a casserole
You can fill the rabbit with whatever stuffing you want, but in this case you will bake it in a casserole with sauce.
Necessary products for the sauce: 1 large jar of canned tomatoes, 2 sliced onions, 50 g butter, 2 tablespoons flour, 1 glass of red wine, 150 g pitted green olives, 2 cloves garlic, bay leaf, black peppercorns, 1 tsp honey, salt and oregano to taste.
Method of preparation: Put the butter in a Teflon pan or a large pan and fry the onion in it. Add the wine, almost all the tomatoes, bay leaf and finely chopped garlic. After about 15 minutes, dissolve the flour in the remaining tomatoes and add all the spices along with the honey. After 5 minutes, remove the bay leaf, put the sauce in the casserole and place the rabbit in it.
