Mediterranean focaccia with white wine
Necessary products: 1 tsp dry yeast, 1/2 tsp. salt, 4 tbsp. white wine, 4 tbsp. olive oil, 3 tsp. white flour, 2 handfuls of olives, 1 bunch fresh onions, 1 tbsp. sea salt, 1 tbsp. rosemary
Method of preparation: Heat 200 ml of water in a saucepan. Add salt, yeast, wine and olive oil. Add the flour, stirring constantly. Knead soft flour and leave it to rise for 30 minutes. Spread the dough, sprinkling with sea salt, finely chopped onions and coarsely chopped olives. Roll it into a roll, making indentations on its surface with your fingers. Sprinkle with sea salt and rosemary. Bake at 250 degrees for 20 minutes.
Dalmatian focaccia
Necessary products: 400 g flour, 150 g olive oil, 2 tsp. salt, 1 tsp. sugar, 200 ml of water, 11 g of dry yeast, 3 onions
Method of preparation: Dissolve the yeast with the salt and sugar in 100 ml of lukewarm water. Add 100 g of flour and leave to rise for 15 minutes. Form a well in the remaining flour, where you can pour the rested mixture. Stir with a wooden spoon until a homogeneous mixture is obtained. Knead it and leave it to rise for an hour. Cut the onion into crescents and fry it in olive oil. Spread the dough in a pan and bake for 10 minutes at 50 degrees. Then increase the temperature to 150 degrees and cover the dough with onions. Bake for 20 minutes.
Poor focaccia
Necessary products: 250 ml water, 1 tsp. salt, 2 tsp. sugar, 2 tsp. dry yeast, 150 g soft lard, 600 g flour
Method of preparation: Dissolve the yeast and sugar in warm water. After foaming, add the remaining products, the fat should be at room temperature. Knead a soft dough. Divide it into four loaves, from which focaccia are formed. Make small indentations with your fingers on each and sprinkle with sea salt and rosemary. The focaccia is baked for 15 minutes at 220 degrees.
Italian focaccia
Necessary products: 500 g flour, 20 g yeast, 1 tsp. sugar, 3 tbsp. olive oil, 250 ml water, salt
Method of preparation: The yeast is dissolved in lukewarm water. Allow to bubble. The remaining products are added. Knead a soft dough. It should rise in 2 hours. Knead again and form focaccia. Spread with a mixture of crushed rosemary, sea salt and olive oil. They can be garnished with halves of cherry tomatoes. Bake for 15 minutes at 220 degrees.
Focaccia with lemon
Necessary products: 500 g flour, 1 lemon, 2 sprigs of rosemary, 1 tsp dry yeast, 1 tbsp sea salt, 1 tbsp sugar, 50 ml olive oil
Method of preparation: The yeast is dissolved in lukewarm water. Allow to bubble. The remaining products are added. Knead a soft dough. It should rise for 1 hour. Knead again and spread in a pan. Leave to rise again for 30 minutes. Cover it with thin (almost transparent) slices of lemon, pressing them after placing. Sprinkle the focaccia with a mixture of chopped rosemary, sea salt and olive oil. Bake for 15 minutes at 220 degrees.
