A study from the University of New Castle shows that carrots contain 25 percent more properties that help fight and prevent cancer when cooked whole and only then cut.

In addition to a thorough study of carrots before and after cooking, as well as whether they were sliced during cooking or not, the study also involved 100 people who had to comment on their taste. Approximately 80 percent of respondents preferred the taste of carrots, which were cooked whole.

Scientists believe that both falcarinol and the natural sugar in carrots pass more intensely through the cell membrane when it is weakened by heat. The larger the area of carrot that is in direct contact with water, the less amount remains of such a valuable phytochemical and all other useful vitamins.
