Method of preparation: Place the butter in a deep frying pan and fry the finely chopped onions, garlic and ginger in it. When they become golden, add the chopped meat to them, which is also fried. Add the broth, tomatoes and all other products and spices. Allow the dish to simmer over low heat, stirring occasionally. If necessary, add water. While the meat is cooking in the pan, spread half of the rice. The fragrant chicken is then placed on it and sealed with the rest of the rice. Add water, cover the dish and bake in the oven until the rice is completely soft. Serve sprinkled with sprigs of fresh mint and coriander.
Basmati with peas in Kuwaiti style
Ingredients: 500 g basmati rice, 450 g frozen peas or canned peas, 3 cubes of chicken broth, 3 slices of dried lemon, 2 onions, a pinch of saffron, a pinch of cardamom, a few sprigs of dill, 5 tbsp melted butter.
Method of preparation: Finely chop the onion and fry in butter. Add sliced lemon, broth, peas and all spices. Mix well and after about 5 minutes add the rice and as much water as indicated on the rice package. Bring the dish to a boil and simmer for about 20 minutes, being careful not to boil the basmati. Served garnished with a few sprigs of dill and consumed both alone and as a side dish to meat or vegetable dishes.
