Maligiano, or green ajvar, is a traditional Balkan snack, which in color sometimes resembles pesto. Prepares mainly from mashed aubergines, green peppers, garlic, sunflower oil. It gets its name from the Italian word for eggplant - melanzane.

It is typical of Macedonia, but is also widely popular in other Balkan countries such as Croatia, Serbia, Bosnia and Herzegovina, where the recipe for Maligiano has undergone some changes.

For example, in some places added to eggplant and peppers, cheese, nuts. In any case, the result is always excellent and the final product has a truly captivating taste.

Recipe for Maligiano

Necessary products: 2 medium aubergines, 1 kg green peppers, 1/2 head garlic, 70 ml oil, 2 tbsp. vinegar, salt - to taste

Method of preparation: Wash the peppers and dry them. Clean them of seeds. Place them in a tray lined with baking paper and bake at 200 degrees until done. Do the same with the washed and dried aubergines.

Once the vegetables have cooled, peel them and clean them well. Put them in a kitchen chopper together with the other ingredients. Mash until you get a puree. Serve with bread and cheese.
