It is typical for most Bulgarian families to have sauerkraut in their winter menu. Every connoisseur of sauerkraut dishes is familiar with its preparation. It is known that it is preferable to buy it from Petarch, who is famous for the excellent quality of his cabbages, the cabbages themselves to be firm, where to buy cans of different sizes and the technology of its preparation.

However, it happens that even in summer, even in the heat outside, we get fed up with sauerkraut. Oddly enough, in the heat of the warmest months, many people begin to dream of a nice sauerkraut, cooked with pork, bacon or other heavy foods. And in fact, the availability of all kinds of fresh and fresh vegetables and fruits in the markets during this time of the season is not a reason not to diversify our menu.

Quite suitable for the spring and summer months are, for example, stuffed sarmis with minced meat and rice. Many housewives in the summer emphasize the stuffed peppers or sauerkraut prepared in the same way from vine leaves or dock, for example. Then why is it strange to prepare cabbage cabbage in the middle of summer?

The reason lies mainly in the fact that at this time of year it is difficult to find sauerkraut. Nowadays, many retail chains offer canned sauerkraut, but if we want it to be made to our liking, it is good to take care of it ourselves. As with all other problems, there are several options.

If we have foreseen the possibility to eat cabbage cabbage in the summer or any other dishes prepared with sauerkraut, it is good to prepare it in the winter.

Once we have filled the can with sauerkraut and it is absolutely ready for consumption, we can take out a few cabbages and prepare them for canning in jars, which by sterilization will keep the cabbage intact for a long time.

For this purpose, the cabbage leaves should be separated and rolled into tight rolls. Thus, they are placed in jars, filled with salted water and sterilized for about 25 to 30 minutes.

If you still forgot to do this procedure in the winter - do not worry. You can buy fresh cabbage at any time of the year, boil it for about 5-7 minutes in salted water, in which you have added vinegar to your taste.

It can also be replaced with lemon juice, and if you want to cook cabbage with an Asian flavor, you can replace plain vinegar or lemon juice with balsamic vinegar.
