Method of preparation: Mix the flour, ginger, baking soda and salt. In a pan, sauté 4 tbsp. butter, brown sugar, 1 vanilla, bourbon and peaches for about 10 minutes. Arrange the fruit on the bottom of a tray with a diameter of 22 cm, pour the sauce.
Beat the remaining butter with the sugar with a mixer, add the eggs one by one, and then - in parts and flour, buttermilk and 1 vanilla, but already mix with a wooden or plastic spoon. Pour over the fruit and bake for 40 minutes in a preheated 180 ° oven. Once cool, the dessert is turned into a serving dish.
Cocktail with flounder and shrimp
Necessary products: ½ onion head, 1 peach, 1 hot pepper, 250 g of flounder and shrimp, ½ tsp lemon juice, 2 tbsp. olive oil, 2 tbsp. coriander, salt and pepper
Method of preparation: Chopped onions, peaches, peppers, flounder and shrimp are drizzled with juice and salt. Refrigerate in a covered bowl for 1 hour, but stir several times. Drain the juice and add olive oil, coriander, salt and pepper to taste. Pour into cups and garnish with thin slices of lime if desired.
Canned peaches
You need: 5 peaches, ¾ teaspoon sugar, ½ lemon juice and a pinch of salt
Method of preparation: Cut the peaches, mix them with the other products in a bowl, cover it and put it in the fridge overnight. Strain the mixture and boil the juice until it is reduced by half. Then add the peaches and cook for about 15 minutes.
To make the jam smoother, you can mash the pieces of fruit with a spoon during cooking. Another option is to grind them in a blender before cooking. The cooled mixture can be stored for up to 3 weeks in the refrigerator or sterilized in jars.
To serve sumptuous desserts with this sweet peach soup, use them to garnish with ice cream, pancakes, creams, sweet souffles or pastries.
