Turnips, along with potatoes, cabbage and beets, is among the favorite vegetables used by the Russians in the preparation of various vegetable dishes.

Interestingly, it was preferred to potatoes until the second half of the 19th century, as it was believed that they, like all foreign products, were a sinful temptation and anyone who tasted them would burn in hell.

For this reason, the variety of recipes involving turnips as a main ingredient in Russian cuisine is huge. Here are 2 of the most popular:

Necessary products: 9 turnips, 5 eggs, 1 tsp. cream of fresh milk, salt and sugar to taste

Method of preparation: Peeled and washed turnips are cut into cubes and boiled. Separately separate the yolks from the whites, beating the yolks with about 1 tablespoon of sugar and adding the cream to them. All this is mixed well and boiled in a water bath with constant stirring until the sauce thickens. To the resulting mixture are added egg whites, previously beaten in snow, and salt to taste. The boiled radish is portioned and covered with sauce. It can be served alone or as a side dish to beef, beef or pork.

Necessary products: 7 medium-sized turnips, 150 g grated yellow cheese, 30 g butter, 200 ml sour cream, 1/2 tsp. rice, 1 onion, 1 boiled egg, a few sprigs of parsley, salt and pepper to taste.

Method of preparation: Peel a squash, grate it and boil it until soft. They are then carved with a spoon so that the filling can be placed in them. It is prepared from finely chopped onions and rice fried in butter. To them is added about 1 tsp. from the broth in which the radish was boiled. Once the rice is ready, add the chopped egg, season with finely chopped parsley, salt and pepper to taste. Stir the filling and fill the turnips with it, which are placed in a pan, sprinkled with yellow cheese and a little butter and baked. Each turnip is served with a few spoonfuls of sour cream.
