Fried cheese with sweet chili sauce

These delicious crispy cubes of fried delight are one of the most popular appetizers in Brazil. The perfect drink that goes with them is caipirinha - the Brazilian national cocktail made from cashews, cane sugar, ice and green lemon.

Necessary products for 4 servings:

250 ml whole milk, 125 g grated halloumi or goat cheese, 125 g granulated tapioca, two pinches of salt, a pinch of white pepper, vegetable oil, sweet chili sauce

Method of preparation: Heat the milk in a small saucepan. In another bowl, mix the well-grated cheese and tapioca. Add the milk, stirring vigorously so that no lumps form. Add salt and pepper. Stir until the mixture thickens. Pour the mixture on foil and carefully roll it out with a rolling pin. Cover it with foil and leave it to cool for 4 hours in the refrigerator. Then cut it into cubes and fry it in very hot fat.

Brazil nuts are a high-protein food and can be consumed in various ways. The milk made from them can be used as a substitute for coconut and cow's milk, as well as in very tasty recipes. In this case, we present you the recipe for arapaima (the largest freshwater fish in the world). Due to its lack in our latitudes, you can use trout or cod as a substitute.

Necessary products for 2 servings: 300 grams of raw Brazil nuts, two fillets of arapaima (trout or cod), 1 tsp. salt and pepper, 2 tbsp. coarsely chopped fresh coriander, 1 zucchini, cut into 5 mm slices, 1 head finely chopped red onion, 60 g okra, cut lengthwise, 60 g finely chopped parsnips, 2 sweet potatoes, sliced 1 cm, 2 tomatoes, cut into slices of 1 cm, 3 sprigs of thyme

Method of preparation: Put the walnuts in a blender with 400 ml of water and turn on the appliance for 5 minutes. Leave the mixture to stand for 30 minutes and strain it through cheesecloth or a fine sieve. Sprinkle the fillets with salt and pepper and let them stand for 30 minutes.

In a large saucepan put 1 liter of water with 1 tbsp. salt and put it on the stove to boil. Boil the sweet potatoes for 5 minutes and the okra for 3 minutes. Arrange all the vegetables in a lightly greased pan and place the fillets on them. Pour all the Brazil nut milk and bake in a preheated 220 degree oven for about 15 minutes.
