Sour are among those desserts that are traditionally present at the Russian table. Although they used to be really sour in taste and were prepared mainly from oats and peas, today they are a favorite delicacy for young and old.
There are a variety of recipes for making Russian sour and although they seem a bit retro, we will offer you 3 of the most popular:
Rosehip sour
Necessary products: 120 g dried rose hips, 6 1/2 tsp. water, 1 1/3 tsp. sugar, 3 tbsp. starch, 3 g citric acid
Method of preparation: The rose hips are washed, flooded with water, which was previously heated to boiling, and left for 3 hours. The mixture is filtered and part of it is diluted with starch, and the rest is boiled together with sugar and citric acid. The starch mixture is added to it, after which everything is poured into suitable bowls and left in the refrigerator until it cools down enough.
Sour from apples
Necessary products: 5 apples, 1 tsp. sugar, 6 1/2 tsp. water, 3 tbsp. starch, 3 g citric acid
Method of preparation: The apples are washed, cleaned of seeds and cut into slices. Pour water over them and boil them over low heat until soft. Strain and mix again with the drained decoction, adding sugar and acid to them and letting everything boil again. To the syrup thus obtained is added the starch diluted with a little water, stirred and poured into suitable cups or bowls, which are left in the refrigerator until sufficiently cooled.
Sour from apples and pumpkin
Necessary products: 450 g pumpkin, 2 apples, 1 1/3 tsp. sugar, 6 1/1 tsp. water, 3 tbsp. starch, 3 g citric acid
Method of preparation: The apples are washed, cleaned of the seeds and cut into slices, and the pumpkin, which has also been peeled and the seeds removed, is cut into cubes. Pour hot water over everything, boil until soft, rub and mix together with the decoction. To the mixture thus obtained add sugar, stir and add the starch diluted with a little water and citric acid. Bring to the boil again, then place in suitable containers and refrigerate until cool.
