The large meatball, made with your own hands, fragrant and hot, always remains a symbol of home comfort. There is no adult or child unless they are sworn vegetarians who can safely miss the opportunity to try delicious, freshly made homemade meatballs.

To create a real masterpiece, not just a meatball, you will need to apply some tricks. The most delicious meatballs are obtained if you use a mixture of beef and minced pork.

If you have the opportunity, give your preference to a whole piece of meat in the store, not the finished minced meat. Then you can grind the meat, and not less than three times.

To make the meatballs more puffy, add white bread soaked in milk without the crust or mashed potatoes. You can replace them with semolina, cottage cheese, raw grated potatoes or zucchini, which, however, is a different version of the classic meatballs.

However, you should not forget that at least two thirds of the composition of the mixture for meatballs must be pure minced meat. If you see that it becomes too flaky, add some more meat.

You can put in the minced meat cut into very small pieces of greaves.

For all our favorite meatballs you need about 1 kg of minced meat mixture, a slice of soaked and drained bread, 1 egg, salt to taste, 1 tsp. black pepper, 1 tsp. cumin and a little hot red pepper if you like the spicy taste. Mix everything and start crushing the minced meat with your hands.

Leave the minced meat to rest in the refrigerator. Before making any meatballs, dip your hands in a bowl of cold water. Let the meatballs shaped in this way fry in moderately hot oil on both sides. You can also roll each meatball in breadcrumbs or semolina - fry first on a very high heat without a lid, and then on a slow, covered lid.

You can also prepare steamed meatballs, if for some reason you do not have to eat fried. Serve the meatballs hot, with mashed potatoes or potatoes, although this is out of the question if you follow the principles of separate eating.

If you suffer from gastritis, do not salt the minced meat for the meatballs and in no case put pepper or other stomach irritants in it, and be sure to steam the meatballs.
