Stuffed peppers are one of the many traditional Bulgarian dishes that we love unreservedly and eat with pleasure and belly pleasure. There is hardly a table that they do not attend, especially on some holidays, such as Christmas Eve. Of course, stuffed peppers are regularly on the table of our people for no reason. According to an unofficial study by gotvach.bg, stuffed peppers are liked by a huge percentage of foreigners. Therefore, we offer you a detailed recipe in which you can easily experiment with the filling.

Necessary products:

1 kg of medium peppers, 250 g of long-grain rice, 250 g of minced beef, poultry or other, 1 large onion, chopped, 4 cloves garlic, chopped, 1 tsp. cumin, 1 tsp red pepper, 2 tablespoons parsley, salt and pepper, 2 tablespoons basil

For the sauce: 2 cans finely chopped tomatoes, 4 cloves garlic, chopped, 1 onion, finely chopped, 2 tablespoons basil, half a teaspoon hot red pepper, 1 tsp sugar, 4 tablespoons olive oil

Utensils: two pots, wooden spoon, spoon, hand blender, cutting board, knife

Method of preparation

Step 1: Make the sauce

Place one pot on a hot plate over medium heat and add a little oil, then add the onions. Allow the onion to simmer, stirring occasionally, until it is almost translucent. Then add the garlic and simmer for about a minute. Add the chopped tomatoes, followed by the sugar, hot pepper, season with salt and pepper. Allow the sauce to cook for 10 to 15 minutes. Then add the basil and simmer for another minute. Finally, using a hand blender, puree the sauce - it should have a thick consistency. Remove from the heat.

Step 2: Make the filling

Heat a skillet over high heat. Pour the fat, add the minced beef, stirring occasionally. When the beef is almost done, add the onion and let it cook for another 2 to 3 minutes. Then add the garlic, followed by the rice, then mix everything well together and turn off the heat. Add cumin and paprika. Season with salt and finally add basil and parsley. Mix well.

Step 3: Fill the peppers

Cut off the lids of the peppers, trying to keep them so that you can cover them with them after filling. Using a spoon, fill each pepper with the pre-made filling, leaving a little space for 1-2 teaspoons of sauce. Repeat with the other peppers. Take each pepper and add a few tablespoons of tomato sauce. Then place it in the pan with the remaining sauce. Finally, cover the peppers with the cut caps.

Step 4: Baking

Preheat oven to 180 degrees. Put the lid on the pot (the pot should have a suitable lid), put it in the oven and let it cook for about 1 hour.

Step 5: Serve the dish

When the peppers are soft, remove the pan from the oven and remove the lid. Using a spoon, pour the sauce onto a serving plate, place the stuffed peppers on top and serve.

The filling for these stuffed peppers can be modified to create an endless variety of choices - next time you can try a seafood filling or a vegetarian filling of cottage cheese, eggs and cheese. The sauce is perfect for any choice you make.
