Lutenitsa is a favorite of young and old, it is on the table in every Bulgarian home. Each family has its own recipe for lyutenitsa, which is passed from mother to daughter.

One of the most delicious homemade lyutenitsa is made with eggplants, carrots and peppers.

Necessary products: 2 kilograms of eggplant, 4 kilograms of tomatoes, 4 kilograms of red peppers, of the thicker, 1 kilogram of carrots, 120 milliliters of oil, ten tablespoons of chopped parsley, 100 grams of sugar, 4 teaspoons of salt.

Eggplants are baked in the oven, peeled and left to cool. The peppers are baked and peeled, the seeds and stalks are removed.

Boil the carrots until soft. All vegetables are mixed and ground. Mix well and add the chopped tomatoes. As soon as the lyutenitsa starts bubbling, add the oil.
