Arabic cuisine hides many known and not so familiar sweet temptations that can really make our lives sweeter and more pleasant. Here's how to make two of the most common desserts from Arabic cuisine, with the exception of baklava, which is already well known in Bulgaria.

Required Products for 4 servings: 250 g flour, 125 g cornmeal, 1/2 teaspoon baking powder, 1 pinch baking soda, 210 g sugar, 2 tablespoons butter, 1 teaspoon lemon juice, 5 tablespoons orange juice, 500 ml water, salt to taste, 100 g walnuts, 1 tsp cinnamon, 1 pinch nutmeg

Method of preparation: In essence, katayef is a syrupy pancake. To prepare the pancake mixture, mix the flour, semolina, baking powder, baking soda, a pinch of salt and mix well. About 380 ml of water is gradually added to this mixture and all this is stirred until homogeneous. The resulting smooth dough is left for about 30 minutes in the refrigerator, and then prepare standard pancakes with a thickness of about 2 mm.

The syrup for the pancake is prepared by mixing about 100 ml of water and 200 g of sugar. Put on the stove and after boiling, add the lemon and orange juice. Everything boils for no more than 10 minutes.

The filling for the pancake is prepared from chopped walnuts, which you mix together with 2 spoons of sugar, cinnamon and nutmeg.

Fill the pancakes with 1 tablespoon of the filling, close them to take the shape of a crescent, spread with syrup and bake for about 10-15 minutes in a preheated oven at 180 degrees. Katayef is served with the rest of the syrup if anyone wants to add extra.

Necessary products: 200 g butter, 500 g flour, 75 g granulated sugar, 75 g powdered sugar, 200 g chopped walnuts, 6 tbsp orange juice

Method of preparation: Melt the butter on the stove, pour it into a bowl and add the flour, powdered sugar and 2 tablespoons of orange juice. Mix everything well and leave the dough for 2 hours in the refrigerator. Meanwhile, mix the walnuts, crystal sugar and the remaining orange juice.

From the dough form small cones, make a hole in their base, fill it with the mixture of walnuts and close it. The cookies prepared in this way are placed with the tops pointing upwards in a greased pan and baked for about 30 minutes in a preheated oven at 200 degrees. Once cooled, the sweet Mamul cookies are sprinkled with a little powdered sugar.
