When we talk about Arabic cuisine, it should be borne in mind that it is necessary to distinguish itself from Muslim countries such as Turkey, Afghanistan, Pakistan, Iran, etc., because their cuisine obeys other rules and has preserved its own traditions.

Typical countries that follow the principles of Arabic cuisine are those from the Middle East and the Maghreb region. As this is a very large region, it is difficult to talk about the main products used in Arab cuisine, but it is characterized by the use of many cereals and vegetables, many fruits, and when it comes to meat, most lamb and poultry meat were used.

Here is a list of dishes that are considered emblematic of some of the Arab countries and a brief information about their content.

Shawarma - This is a specialty of Iraqis. It is something like a skewer, but made from lamb. It is seasoned with different spices according to the area in which it is made and baked over a very low heat, as the place is cut into equal sized pieces and pounded on a metal skewer, which is rotated until the meat is completely cooked.

Bulgur meatballs - Although this dish is widespread in almost the entire Arab world, its greatest masters are considered to be the Syrians. Bulgur meatballs are stuffed with meat, onions and pine nuts.

Cous cous - This is a traditional Moroccan dish and has nothing to do with the couscous we know in Bulgaria. Moroccan couscous is made from semolina and is prepared by boiling in a clay pot over meat and vegetables. Once ready, it is consumed with lamb or chicken.

Medames - This dish is very typical of Egyptian cuisine and Sudan. It is something like bean puree, seasoned with salt and oil, to which onions and peppers can be added. Most Arabs also add the same hot peppers.

Tables - This is a type of salad that is common in most Arab countries. It is a mixture of bulgur, parsley and onion, finely chopped, which are flavored with lemon.

Hummus - The most common dish in Lebanon, but there are heated disputes with Israel about the origin of Hummus. It consists of prepared puree from the inside of eggplant or chickpeas, combined with all sorts of additives.
