There are several unchanging things in the winter and among them it ranks unquestionably sauerkraut. It is synonymous with snow and cold, Christmas and New Year, a faithful companion of brandy and red wine. Do you already smell of sarma and pork with sauerkraut?

Pork with cabbage, cans, cellars… They sound so traditionally Bulgarian that you will surely be surprised to learn that sauerkraut is neither invented in Bulgaria, nor is it prepared only in Bulgaria and is far from being consumed only in Bulgaria.
It is part of the culinary traditions and tables in many countries in Europe, found in the United States, South America, Asia and even in hot Africa. Sauerkraut is traditionally eaten not only in Bulgaria but also in countries such as Germany, Austria, Belgium, France, Hungary, Poland, Czech Republic, Romania, Switzerland, Russia… Sauerkraut is known and often consumed in southern Brazil, Chile, China and even in Namibia.

In Italy, it is especially popular in the region of Trentin-Tyrol du Sud, where in 1999 it acquired the name of a traditional agricultural product.
And in France, the traditional recipes with sauerkraut are from Alsace. And there it is garnished with meat, but unlike ours it is combined with various sausages such as sausage and sausages plus potatoes and many spices.
In fact, the story goes that the homeland of sauerkraut is China. According to legend, the technology for its preparation was first tested in the III century BC by the builders of the Great Wall of China.
According to one hypothesis for its spread around the world, the Huns, failing to capture China, continued their conquests in the West and reached Bavaria, Austria and Alsace.
It is in these areas around the year 451, according to various sources, begins to prepares sauerkraut based on fermentation. It has already been tested in these places with various vegetables, especially turnips.
