Baskets of fresh salad
Necessary products / for about 15 pieces /:
About the baskets: Butter - 120 g / soft /; eggs - 1 pc.; flour - 250 g; sol
For the salad: Ricotta / or cream cheese / - 250 g; green salad mix; radishes - 5 pcs.; boiled quail eggs - 15 pcs; olives - 15 pcs.
Method of preparation: Stir in the butter and add the egg and flour with the salt. Knead a soft dough. From the dough, form balls and distribute them in aluminum cupcake tins. Bake them in a preheated oven at 180 degrees for 10-15 minutes and set aside to cool. Mix the ricotta with a pinch of salt and fill the tartlets. Garnish with fresh salad, radishes, eggs and olives.

Zucchini roll with ham
Necessary products: Zucchini - 600 g; eggs - 3 pcs.; flour - 5 tablespoons; cornstarch - 3 tablespoons; garlic - 2-3 cloves; oil - 2 tablespoons; salt; dill.
For the stuffing: Cream cheese - 200 g; ham slice; dill.
Method of preparation: Peel a squash, grate it and squeeze the juice. Add salt and allow to drain, squeezing well with your hands if necessary. Add the eggs, finely chopped dill, grated cheese, mashed garlic cloves and oil to the already drained zucchini. Mix well.

Add the flour and cornstarch and mix again very well. Spread the mixture on a rectangular tray measuring 30/30, covered with baking paper. Bake in a preheated oven at 200 degrees for about 15 minutes or until the loaf begins to turn slightly red.
The finished loaf is removed and together with the baking paper is placed on a towel, slowly rolled up and left to rest for 10 minutes. Then it is developed and spread with cream cheese, sprinkled with dill, sliced ham and again carefully roll it up, separating the paper from the marsh. Cover with fresh foil and refrigerate for 2 hours. Cut into pieces and arrange in a plateau.
Eggplant and red pepper rolls
Necessary products: Eggplant - 2-3 pcs; red pepper - 7-8 pcs.; salt; olive oil; parsley for sprinkling.
Method of preparation: Wash and cut the eggplant into strips, remove the stalks and clean the pepper seeds. Roast the vegetables on a barbecue or grill. Peel the peppers. Season with olive oil and salt. Put half a pepper in each eggplant strip and roll it up. Optionally garnish with parsley. Serve the rolls cold.
Zucchini rolls with cream cheese and cherry tomatoes
Necessary products: Zucchini - 3 pcs.; cream cheese - 150 g; garlic - 3 cloves; walnuts; dill; olive oil; vinegar; Cherry tomatoes.
Method of preparation: Zucchini are washed and cut into strips. Roast the zucchini on both sides in a ribbed pan, place them in a bowl and season with salt, olive oil and vinegar. In a separate bowl, mix the cream cheese with the garlic, dill and walnuts and mix well. At one end of the roasted zucchini put some of the mixture and roll. Put cherry tomatoes on top and fix with a stick so that they do not develop.
