The most famous on the Bulgarian market is "key lime" or "Mexican lime". The word "cue" in the name comes from the Florida Keys area, which is located near Miami, in the southernmost part of the United States. Since 1926, the widest distribution and cultivation of this variety has been concentrated in this region. Cue lime is used as a special and indispensable ingredient in the famous, local lemon pie.

This lime has a spherical shape and when ripe it turns a slightly yellowish color, although it is widely available in the commercial network peeled unripe and green in color. It is finer than ordinary lemon and has finer and softer seeds. And unlike Persian lime, it has a higher acidity, a stronger and distinct aroma and a thinner skin of the fruit. It is more resistant to climate change than lime cue, is larger than it is and is seedless, which is why it is often used in dried form or in the decoration of cakes and pies.

Kaffir lime is also called: kombava and makrut lime. Its origin is from Indonesia and Malaysia. Often used in traditional Asian dishes. Its bark is rough, uneven and hard. Its color varies from light green to deep green. The taste of kaffir lime is astringent.

Its leaves are also used in local culinary traditions, both fresh, raw and dried. This lime is an integral part of Indonesian folk medicine. It is considered too acidic for direct consumption.

There is also an Indian variety of lime or, as it is also called, Palestinian. The shape of the fruit is oblong, ovoid or almost round, with rounded edges. Its bark is fragrant, greenish to orange-yellow when ripe. It also has a smooth surface. The fruit is juicy, slightly sour and bitter and has a soft, unobtrusive taste.

The wood is harder than that of sour lime varieties. Lime differs from lime in its sweeter taste, thicker fruit rind and yellower color.
