Meat Zagovezni is always celebrated exactly 8 weeks before Easter and according to tradition today is eaten for the last meat until the resurrection of Christ.
The name of the holiday comes from the traditional dinner of Mesni Zagovezniwhich should include only meat dishes. According to the folk rite, the newlyweds today must visit their godparents and the bride's parents, bringing them gifts of boiled chicken, ritual bread and wine.
The traditional dishes for Meat Zagovezni are boiled chicken, pork with sauerkraut, pork with bulgur or chickpeas, sarmi with meat, pie with butter and pie with meat.
The week after Meat Zagovezni is called Sirnitsa and during it until the next Sunday, when there are Sirni Zagovezni, dairy products and eggs can be eaten.
One of the obligatory dishes for Meat Zagovezni is the pie with butter, which is typical for the winter season.
To prepare it, you will need 400 g of flour type 500, 250 g of cow's cheese, 8 tbsp. butter, 120 g butter, 200 ml water, 3 eggs, 20 ml oil, two-thirds tablespoons of vinegar, 1 tsp. salt and half a teaspoon of baking soda.
First knead the dough with water, flour, salt, baking soda, oil and vinegar. The dough is then divided into 8 balls, each of which is rolled out into a thin crust.
The crusts are greased and stacked on top of each other. Then the dough is divided into two parts and the first is rolled out, greased, folded in two and spread again until the dough looks like a ball again. The same is done with the second part of the dough.
The two balls should stay in the refrigerator for about 3 hours. Then the first ball is rolled to the size of the tray in which the pie will be. Place in a bowl and sprinkle with cheese and eggs on top.
Cover the mixture with the second crust and pour over the melted butter, then cut and bake in a preheated oven.
