In the raw state, as well as in the form of an extract, some valuable antioxidants are extracted from parsnips, such as falcarinol and panaxidiol. Falkarinol has been shown to slow the growth of cancer cells. The discovered antioxidants, in addition to anti-cancer, also have antifungal and anti-inflammatory effects.
