Stilton / Stilton / is a cheese of English origin. It is the most famous British blue cheese, and it is also the only one in England that has its own certified trademark.

Stilton is available on the market in two versions - blue cheese / the better known version / and white cheese, which is not very popular and is very rare outside the UK.

An interesting fact is that to obtain an 8 kg pie, about 78 liters of cow's milk are needed. The consistency of the cheese is semi-soft and crumbly, and the ripening time is at least 9 weeks. The older the cheese, the softer and more fragrant it is.

According to a recent study, this famous English cheese may disappear in the coming decades. This is due to reduced demand. The reason for the decline in interest in blue cheeses is said to be mold.

The cheese Stilton is named after the eponymous town of Stilton, which is located 80 miles from London. An interesting fact is that it was never produced there. In the 18th century, a trade route from London to York passed through it, and Stilton was a very important road station.

The owner of an inn in the city, Cooper Thornhill, was the first to offer his guests cheese he had bought from an ordinary farmer. The cheese quickly gained popularity and received the name of the city.

Later Stilton began to spread outside England by traveling merchants. Even today, 300 years later, the cheese is produced exclusively in the counties of Derby, Nottingham and Leicester. Only 7 dairies that use the original recipe passed down for centuries are licensed to produce Stilton cheese. Some call him the "king of sirens."

Selection and storage of Stilton
