One very important but often overlooked ingredient in our diet is selenium. Its deficiency in the body leads to a number of unpleasant symptoms, including muscle weakness, problems with thyroid function, high cholesterol, heart rhythm disorders, fatigue, rapid aging and more. It turns out that one of the best sources of selenium, as well as a number of other useful substances, is semolina.
What exactly is semolina?
This is a product that is obtained by grinding corn or wheat grains. It is divided into coarse-grained and fine-grained. In the first case it is semolina obtained by coarser grinding of the grains. In the second case - for finely ground grains or for a product obtained after sifting coarse-grained semolina.
Many may not know it, but semolina is used to make pasta, spaghetti, couscous, tagliatelle, and many other pasta products that are widely used around the world.
At the same time, it is the basis of many delicious desserts, such as semolina halva, semolina milk, creams and cakes with semolina, and in salty dishes it is indispensable for breading fish or making porridge.
What is selenium and why do we need it?
This is one of the most valuable trace elements that we can get only with a complete diet. It is needed in very small quantities, but we often suffer from shortages. The reason is that it is difficult to obtain, especially when food does not include good sources.
It is necessary for dealing with free radicals, for normal metabolism and for the proper functioning of the thyroid gland. It also has anti-cancer effects, reduces the risk of developing cardiovascular disease, has a prophylactic effect against Alzheimer's, Parkinson's and atherosclerosis, and also improves the functioning of the immune system.
How much selenium is in semolina?
Semolina is a great source of selenium. In addition, it is one of the cheapest and most affordable sources of the valuable trace element, unlike other products that contain it - much more expensive Brazil nuts, for example. One hundred grams of the raw product contains 89.40 micrograms of selenium.
One serving of cooked semolina contains 37 mcg of selenium, which ensures the consumption of two thirds of the recommended daily intake. Therefore, if you eat a portion or two of semolina every day in the form of salty dishes, pastries or just porridge - you may think that you have got the much-needed trace element.
