When the appetizing spice was born, there were no mixers or food processors. Our great-grandmothers prepared it in cauldrons, in which they put and mixed all the ingredients one by one - and toasted pumpkin seeds, and toasted corn, salt, toasted flour, fenugreek, savory. For whom it is hot - and hot peppers. One of the subtleties of cooking is not to make it bitter.

Like many other impressive recipes, this one colored salt exists in many variants, competing in variety and flavors. Different regions have formed their own combinations of ingredients and fragrances that are able to provoke the appetite of everyone.

One of the most famous is the colorful salt from the village of Staro Zhelezare. There, each woman grows her own ingredients at home. They make black pepper, which can sometimes be hot, add mint, which is not very typical for the recipe, and in addition to white salt, red pepper and fenugreek, they also add crushed fennel seeds. The people in the village are so proud of it that they have made a special Spice Corner in the House of Traditions, where they can teach the curious how to cook old iron salt.

Among the famous recipes for colorful salt is the one from the Panagyurishte village of Buta. Its main ingredients are savory, fenugreek, sweet or hot pepper, roasted corn, roasted pumpkin seeds, salt, and sometimes wild thyme. Buta is also very proud of its salt, so they dedicated a special holiday to it. For years, a festival has been organized in the village, where people sing, play and compete in various culinary skills, all related to the colorful salt.

There are parties related to the appetizing spice in Vidin, Svoge, Kula, Burgas and many other places in Bulgaria.

And if you decide to immerse yourself in the traditions, you can try to mix this purely Bulgarian recipe yourself. Just know that its main ingredients are savory, which gives that characteristic smell of delicious, fenugreek, which carries the grassy scent and red pepper, which gives sweetness. If you add samardala for a more spicy taste, you will not go wrong. Nor with pumpkin seeds, which give density. Some also add thyme, oregano, cumin, fine corn flour…

But it's all a matter of taste, and taste is above all!
