Wild garlic is also called bear's onion, wild garlic, yeast and sorrel's onion. There is a legend about its healing properties. It is believed that after hibernation, bears look for it to cleanse their stomachs, intestines and blood.
Wild garlic can be found mostly in moist and shady meadows, rich in humus, under shrubs in deciduous forests and in the mountains. There is no mistake - its strong garlic smell is felt even before the plant is noticed.
The leaves as well as the bulbs of wild garlic are used like those of garden garlic. The difference, however, is that the wild version of the vegetable has significantly more beneficial properties than it.
It is rich in vitamin C, and the whole plant contains essential oil, which includes vinyl sulfide, divinyl sulfide, alliin, pipecolic acid, traces of mercaptan and others. The bulbs also contain mucous substances, mineral salts, sugars and the antibiotic allicin.
Wild garlic leaves are harvested in April and May, and the bulbs - in late summer and autumn. The fresh leaves become an amazing flavoring of soups, sauces, salads and local dishes. It is enough to cut into small pieces.
Its bulbs are removed after the seeds are fully ripe and dried. It is most suitable for people who love garlic, as its aroma and taste are much stronger than those of homemade garlic. And as we mentioned - you can replace it in any recipe.
Folk art offers us interesting recipes, again with wild garlic as the main participant. Like those for wine and brandy from it.
Wild garlic wine
A handful of finely chopped leaves are put to boil a little in about 1/4 liter of white wine. Sweeten to taste with honey or syrup. Wild garlic vinegar is prepared in the same way, but it is boiled with wine vinegar instead of wine.
Wild garlic brandy
A handful of finely chopped leaves or bulbs are filled without crowding, in a bottle to the throat. They are flooded with 38 to 40% wheat or other homemade brandy. The bottle is left to sit for 14 days in the sun or near the stove.
From the listed mixtures it is drunk prophylactically for health. However, if you like them, there are no restrictions.
Wild garlic salad
The perfect summer and extremely healthy salad includes yeast in its composition. It is the additive that gives a more spicy taste, but without the pungent smell of traditional garlic.
Necessary products: 2 large tomatoes, half a cucumber, peeled and diced, half a head of red onion, a handful of chopped wild garlic, a few canned anchovies (optional), 1 tablespoon capers, a pinch of hot red pepper, 2 tablespoons apple or balsamic vinegar, 3 tablespoons olive oil, parsley and celery leaves, Himalayan salt
Method of preparation: The vegetables are washed and chopped. Pour into a salad bowl and season with salt, olive oil and vinegar. Add the chopped fish and capers. Sprinkle the salad with plenty of green spices and serve immediately. If desired, a pinch of chili flakes can be added.
Cold wild garlic soup
Necessary products: 2 bunches wild garlic, 1 clove garlic, 70 ml olive oil, 80 ml soy cream, salt and pepper
Method of preparation: The wild garlic is washed and the garlic clove is peeled and cut into large pieces. Put all the products in a blender, mash, add a little water and mash again. Season the soup with salt and pepper to taste and serve.
