Prekmurje gibanica is an extremely popular pastry in Slovenia. It contains poppy seeds, raisins, walnuts, apples and ricotta cheese. It takes a lot of time to prepare, but the result is more than amazing. Here's how to make it:

Prekmurje gibanica

Necessary products: 500 g pie crusts, 50 g butter for spreading.

For the cheese filling: 250 g ricotta, 3 egg yolks, 200 g sugar, 25 g raisins, 2 egg whites, 1/2 lemon peel, 1 vanilla

For the poppy seed filling: 100 ml fresh milk, 50 g sugar, 1 egg white, 150 g poppy seeds, 25 g raisins, 2 tbsp. rum, peel of 1/2 lemon, 1 vanilla.

For the apple filling: 300 g apples, 50 g powdered sugar, 10 g cinnamon

For the walnut filling: 150 g walnuts, 10 g cinnamon.

For the filling: 200 ml of animal cream, 50 g of butter.

Preparation: The cheese is beaten together with the vanilla, the yolks, 100 g of sugar and the lemon peel. The proteins are broken down together with the rest of the sugar. The cheese mixture is added to them, together with the raisins.

The poppy seed milk is heated. In a bowl, mix with rum, grated lemon zest, vanilla and raisins.

Beat the sugar with the egg white. Poppy seeds are added to them. The result is added to the milk mixture and stirred.

Peel the apples and cut them into cubes. Put in a bowl and sprinkle with cinnamon and powdered sugar. Leave for 20 minutes, then drain the juice.

Crushed walnuts are mixed with cinnamon. Mix the butter and cream for the filling and melt over low heat.

The crusts are cut according to the shape of the baking dish. Three of them are greased with a part of the melted butter and arranged on the bottom of the greased form. Spread the walnut filling on top. Three new greased crusts are arranged on it.

Next is the stuffing with apples and three new peels. Last put the stuffing with poppy seeds and cover with peel. The resulting is poured with a mixture of cream and butter. Prekmurska gibanica is baked at 180 degrees for about 40 minutes. Serve slightly chilled.
