Summer is the season of raspberries and we can't help but be tempted by them. These little red fruits are a real delight for the senses. A desserts that can be prepared with raspberries, are more than diverse. Here are some ideas for them:
Raspberry soup
Ingredients: 500 g raspberries, 500 ml water, 20 g semolina or starch, a pinch of salt, sugar to taste, lemon peel.
Preparation: The fruits are stewed in water, together with the grated rind of half a lemon. Once stewed, mash well. Using a wooden spoon, pass through a colander. Semolina or starch dissolved in cold water is added to the resulting mixture. Season with salt and sugar to taste. The resulting "soup" is served hot or cold.
Raspberry cream
Necessary products: 500 g raspberries 4 proteins, 200 g sugar.
Preparation: Beat the egg whites into thick snow. Mix with half the sugar. Sprinkle the remaining sugar with the raspberries. Add half the egg whites and mix well. The resulting cream is garnished with the other half. Leave for a few hours in the refrigerator before serving.
Raspberries with cottage cheese
Necessary products: 250 g of cottage cheese, 250 g of raspberries, 100 g of sugar, 250 g of sour cream.
Preparation: The cottage cheese and cream are mixed and beaten in the snow. Add the raspberries to the result and mix well. Add sugar to taste. Serve in dessert cups.
Pink cocktail
Necessary products: 300 raspberries, 100 g strawberries, 100 g chocolate liqueur, 4 tbsp. ice, broken snow, champagne.
Method of preparation: The fruits are mashed. The result is distributed in 4 cocktail glasses. In each drop 25 g of chocolate liqueur and 1 tbsp. ice on snow. The glasses are topped up with champagne and served.
Raspberry pancakes
Ingredients: 3 eggs, 50 g flour, 250 ml milk, a pinch of salt, 250 g raspberries, a little butter, 100 g powdered sugar.
Method of preparation: The pancakes are prepared in the usual way. While still warm, sprinkle with raspberries, pre-sprinkled with sugar and mixed with cream or liquid chocolate. Fold the pancakes and sprinkle with powdered sugar.
