Necessary products: 400 grams of turkey, 100 grams of cheese, 300 grams of mushrooms, salt and pepper to taste, 2 tablespoons olive oil.

For the sauce: 50 grams of butter, 1 tablespoon flour, 100 milliliters of white wine, 100 milliliters of liquid cream, 50 milliliters of diced broth, 1 egg yolk, 2 tablespoons of lemon.

The turkey is cut into pieces about 1 cm thick, lightly pounded, salted and sprinkled with black pepper. Fry each piece on both sides in hot fat until golden.

To prepare the sauce, fry the flour until golden, add white wine, cream and broth in a thin stream. Boil in a water bath for 10 minutes, stirring constantly. Remove from the heat and add the butter, egg yolk and lemon juice while stirring.

Arrange the turkey in a pan or yen form, put the sliced mushrooms on top, pour the sauce and sprinkle with grated cheese. Bake for 10 minutes, covered with foil, and another 10 minutes - without it. Serve with fresh or stewed vegetables.

After the dish boils, reduce the heat and simmer for 50 minutes. The broth is filtered.

Beat the yolks with the cream and add a little of the warm broth to the mixture so as not to cross the building. Pour in a thin stream into the broth and stir continuously for 4 minutes, not allowing to boil. Add salt to taste and if the sauce is very thick, dilute with a little liquid cream.

Put the turkey with the mushrooms together with the vegetables in a plate and pour the sauce over it. Serve with stewed potatoes or rice.
