Steak is a great dish if prepared properly. Steaks cooked in the oven on a special "grill" are great if you want to get the perfect piece of meat, especially when you do not have access to the barbecue in the yard.
The grill allows the food to be above the pan so that the fat can drain into the pan and not accumulate around the meat. Unlike the yard barbecue, this cooking in the oven provides constant temperature control and convenience of baking at home.
Choice of steak
From a butcher's shop or grocery store, choose a steak that resembles marble (meaning the meat is a little colorful) and has a nice red color.
1. It is best to bake steaks that are medium in thickness. So, choose steaks up to 3 cm thick. If the steak is too thick, the outside of the meat will burn and the inside will not be burnt.
2. If you keep the meat in the marinade, it should be refrigerated (at a temperature of 4-5 degrees or lower), especially if you leave the steaks marinated for more than 30 minutes. This will help prevent food poisoning. To get a better taste, let the steaks rest for 20-30 minutes. Before you start roasting, temper the meat.
Preparing the steaks for baking
If your steaks are of very good quality (for example beef fillet), this is enough to season with salt and pepper.
For firmer pieces of meat, you can use a marinade that will give them a pleasant aroma and soften them. Keep the beef for an hour or more in a sauce containing a combination of vinegar and salt (or soy sauce). This will soften the hard meat fibers and the aroma will penetrate deep into the steak. Place the steaks in a plate or bowl, pour the marinade and cover with the lid of the dish or plastic wrap.
Prepare the pan in the oven. When your steaks are ready to bake, place the griddle in the oven so that the top of the steaks is 10 cm away from the heater. Then preheat the oven to 180 degrees. Place the steaks on the grill, draining the excess marinade.
The baking time of steaks will largely depend on the meat and the type of oven you use. Baking time varies from 3 to 18 minutes. Experience has shown that you need to watch the roasting of the steaks. When baked on one side, turn on the other, otherwise the meat will burn.
