Drying peppers is an integral part of the Bulgarian culinary tradition. There is no housewife who does not know at least a few tempting recipes with dried peppers. Every dish with them becomes an unforgettable and delicious culinary pleasure.

In preserved data from the seventeenth century, ancient physicians prescribed to their patients peppers in powder form. This treated sciatica, as well as digestive and flatulence problems.

Nowadays, these properties are fully confirmed. Dried peppers stimulate gastric secretions, act as a powerful vasodilator of the circulatory system and promote the release of gas in the intestines.

Its healing properties are due to the high levels of vitamin C in their composition. In addition, they contain carbohydrates, proteins, essential oil, alkaloids, provitamin A, organic acids, mineral salts and more.

Tests show that taken in small amounts, they have a beneficial effect on the gastrointestinal tract, stimulate appetite and tone the body.

In medicine, dried hot peppers are mainly applied externally, in the form of patches and ointments for rheumatism, discopathy and sciatica.

One of the oldest methods of drying peppers is a string in the yard. To this day, drying red peppers for the winter in this way is still used by many housewives. Their taste and aroma cannot be compared to the frozen or canned products from the store.

Long, straight and slightly fleshy peppers are chosen for drying. They are strung on a strong thread, through the handles, oriented in opposite directions to ventilate.

The string of peppers hangs under a canopy in a well-ventilated place. They should not be constantly in the sun. When the weather starts to deteriorate, the peppers are moved to a dry and cool room.

Before use, heat the dried peppers with boiling water and leave to cool in a pan under a lid.

Red pepper can also be prepared from dried red peppers. For this purpose, well-dried peppers or cambi are cleaned of seeds and placed in the oven.

Then they are crushed or ground in a machine. Sift through a sieve. The result is spread in a thin layer and allowed to dry completely. Store in a tightly closed glass jar.
