Peel the vegetables, cut them into pieces and blanch them for about 3 minutes in boiling water. Blanching is done to preserve the useful vitamins in vegetables and to facilitate their culinary processing at a later stage.

After removing the vegetables from the boiling water, allow them to drain and cool and arrange them in trays. This is done so as not to crush the vegetables when they are frozen in bags.
