Halloumi is a goat cheese, traditional for Cyprus, which is served grilled and has a characteristic mint aroma. Typical for Cyprus is the eggplant moussaka with minced meat and bechamel sauce, as well as stifado - beef, prepared in vinegar with lots of onions and spices.

The Cypriot salad with grapefruit and cheese is very tasty. Ingredients: 2 grapefruits, 200 grams of tomatoes, 50 grams of olives, 200 grams of soft cheese. For the dressing: 3 tablespoons olive oil, 1 teaspoon parsley, salt and pepper to taste.

Preparation: Peel a grapefruit, remove the white skin and cut the fruit into pieces. Tomatoes are cut into circles, the cheese is cut into cubes.

Drain the olives. The pieces of grapefruit are arranged on a plate, and tomatoes and cheese are arranged on them like tiles.

Garnish with olives and pour the sauce, which is prepared by mixing all the products. The salad stays in the fridge for half an hour and is served.
