When the sourdough milk becomes a thick mass, it is collected and placed in wicker baskets known as talarins. In this way, halloums are prepared at home, not in industrial conditions.

The cheese is squeezed and pressed, removing excess moisture that flows through the holes in the basket. Halloumi is boiled, then salted and seasoned with mint.

Halloumi can be baked on a barbecue and, unlike other cheeses, it is baked, not melted or dripped into the fire. Halloumi cheese is made with a light scent of mint. This makes the cheese even tastier. Halumi is a national product of Cyprus, where the rights to it are held.

Very often halloumi cheese looks like a compressed horseshoe. This is obtained when the finished cheese pie is sprinkled with mint and folded in half. Then this semicircle with mint sprinkle is cut crosswise.
