The lamb is a symbol of innocence, virtue and kindness. It represents the remembrance of Christ and his sacrifice on the cross. That is why Christians put it on their table for Easter, and in our country it is a mandatory element of the table on St. George's Day.

Traditionally, the part of it that is considered the most sacred is prepared - the thigh. But of course, you can make your holiday dish with any other piece of meat. Lamb chops, lamb shoulder or lamb fillet can also be irresistibly delicious.

The tradition with the lamb leg is not limited to one dish, it can be observed through various culinary incarnations. Baked, boiled or wrapped in crust - recipes as you like. Lamb stew is also a good idea because it uses fresh spring vegetables that are appearing on stalls right now.

Of course, you can make your holiday more interesting with a more unconventional recipe. Lamb pie or lamb pilaf are good ideas for an alternative to the traditional ham.

Prepared with spices, dried fruits or original recipes, lamb provides all the possibilities in the kitchen. You can also serve it as an appetizer, shredded in a salad or as a delicious skewer.

Here are some recipes that can serve as a starting point when considering the menu for St. George's Day:

Lamb leg in salted bark with thyme

With this easy to prepare and at the same time festive dish you can catch the eyes of your loved ones. The lamb is stewed in a crust mixed with flour, salt, egg and thyme blossom. All this gives the meat an irresistible and fragrant delicate taste.

It will take you about an hour to prepare four servings of this irresistible Easter dish.

The products you will need are 1.5 kg of boneless lamb leg, 1 kg of coarse salt, 300 g of flour, 1 egg, 2 tablespoons of olive oil, a piece the size of hazelnut oil, a tablespoon of thyme and a pinch of fine salt.

Before you start cooking, preheat the oven to 210 degrees. In a large bowl, pour the coarse salt, flour and half a glass of water. Then stir until you get a homogeneous mixture and leave it for about an hour in a cool place.

Meanwhile, put the olive oil and butter in a pan, add salt and pepper to the lamb, then put it in the pan and leave it until golden.

Spread the previously made mixture 2 cm thick in a pan, put the leg on top, sprinkle with thyme and close, moistening the edges with water to stick.

Break the egg in a glass and add a tablespoon of water. Stir and brush the mixture on the dough.

Put the pan in the oven for about 45 minutes, then remove the food and let it rest for 15 minutes. Break the crust, cut the ham into slices and serve.

Lamb chop with spices and almonds

This recipe is easy to prepare and at the same time extremely tasty. Lamb chops are baked with a crust of spices (such as parsley, chervil and tarragon) and almonds. They are perfect, served with mashed potatoes.

It will take you about 40 minutes to make six servings. And also two lamb chops with 6 ribs each, bunches of parsley, chervil and tarragon. You will also need 60 g of almonds, 1 egg white, 3 tablespoons of breadcrumbs, 40 g of butter, 2 tablespoons of olive oil, salt and pepper.

Start cooking with the spices - rinse them and cut them into small pieces. Mix the almonds to make a powder. Then mix in a bowl the softened butter with the spices, almond powder, breadcrumbs, egg whites, salt and pepper. Stir until you get a homogeneous mixture. Preheat oven to 210 degrees. Heat olive oil in a pan, put the chops and leave them for about 3 minutes until golden. Salt them and sprinkle with black pepper.

Then put them in a pan, spread the mixture of spices on top and press hard. Place in the oven for about 20 minutes. Remove and leave under aluminum foil before separating and carefully cutting the meat. Serve with mashed potatoes.
