The liquids are oil and lemon juice, stabilized after mixing the lecithin in the egg yolk. For comparison, in purchased mayonnaise egg yolk is replaced by other stabilizers.

When you decide to make homemade mayonnaise, first find the freshest possible eggs on the market. This is very important, because the longer an egg stays, the more the lecithin condition decreases. The oil you will use is best to be sunflower oil or refined olive oil. Its taste should not prevail over other ingredients.

Necessary products: 2 egg yolks, 1 whole egg, 1 tbsp. freshly squeezed lemon juice, salt, 2 cups vegetable oil or plain olive oil

Method of preparation: Put the yolks, whole egg, lemon juice and salt to taste in a bowl. Stir with a mixer for about 10 seconds until the mixture becomes creamy. (Can also be prepared in a blender at maximum speed).

Without turning off the mixer, add the oil slowly and in small amounts. When the sauce starts to thicken, you can add the remaining oil in a thin stream. When the new dose of oil is completely absorbed, a new one is added.

The amount of oil you add depends on what consistency you prefer. If your mayonnaise becomes thicker than you prefer, you can dilute it with a few drops of lemon juice or warm water. Resist and add salt as needed.

Store the mayonnaise in a closed container in the refrigerator. It is valid for up to 4-5 days. To the mayonnaise prepared in this way you can add any ingredient you like, crushed spices, fresh green spices, mustard, ketchup or tomato paste, etc.
