Hyssop is a fragrant perennial herb. In Bulgaria it is most often found in southwestern Bulgaria and in the Belogradchik region, on high limestone rocks. It is mostly popular as an herb with a pronounced anti-inflammatory effect. Recommended mainly for coughs and stomach problems.

Apart from being an herb, however, hyssop is also a popular spice. In southern Europe, for example, it is often added to home-made liqueurs.

In traditional cuisine, hyssop can replace ginger. It is also used in place of nutmeg, in flavoring various creams, puddings and various porridges.

Hyssop leaves and flowers smell sweet and have a slightly bitter taste. The most widely used are fresh, as a spice to various pâtés, soups and minced meat. Added to roast beef, hyssop gives it an incredible spicy taste.

In addition to fresh, hyssop is also used dried. In both forms, but in small quantities, is a wonderful addition to roast pork, bean and potato soups, ragout, beef meatballs, cottage cheese, cheese.

Corresponds well with other spices such as oregano, marjoram, basil, parsley and dill. Once added to the dish, it should no longer be covered with a lid. Taking it in the form of a spice makes any dish easier to digest.

The rhizomes of the plant also have a culinary application. They have a light, pleasant aroma and slightly pungent taste. From them syrups and candied pieces are prepared, used as candies.

The plant is also used to make tea, which is mainly used for healing. It fights gastrointestinal problems, especially gas and loss of appetite. The plant has a mild antispasmodic and diuretic effect on the bladder.

For this purpose, 1 tsp. dried chopped hyssop mixed with ½ tsp. thyme and ½ tsp. St. John's Wort. The mixture is poured with 1 tsp. cold water. The decoction is boiled, left for about 5 minutes, then filtered. Drink 2 glasses a day - before breakfast and at bedtime.
