Experts comment that the presence of sodium nitrite, the so-called E-250. Although it is one of the usual ingredients of most perishable products on the Bulgarian market, it is carcinogenic.
Sodium nitrite is especially dangerous for babies and young children. Its use in quantities greater than 4 milligrams per 100 grams. Often, however, domestic producers reinsure and invest more.
Another practice of the manufacturers is to use the red colorant E-124 - Ponceau. It gives a nice and fresh pink color to sausages, but leads to hyperactivity in children.
Beef salami, produced without beef, is just one example of incorrect production practices of Bulgarian producers. The more settled Bulgarians with "nostalgia" remember the lean sausages without meat (understand horns, hooves, skin, etc.)
