The dishes with offal are delicious and very useful, and have been present on the Bulgarian table for centuries. They are easy to prepare, but the insides must be very well cleaned so as not to get the dish with a characteristic unpleasant odor.
Fried beef kidneys are easy to make. Ingredients: 400 grams of kidneys, 2 tablespoons oil, pepper, salt to taste, 2 teaspoons lemon juice, 2 tablespoons flour.
The kidneys are washed very well, soaked for an hour in a solution of water with a little vinegar and washed once more. Cut into pieces, roll in flour and fry in hot fat. Once they turn golden brown, take them out to drain the fat and sprinkle with lemon juice. They can also be baked in the oven, cut in half.
Stewed offal is also very tasty. Ingredients: 800 grams of offal, beef or pork, 2 onions, 2 tablespoons vegetable oil, 1 teaspoon ground black pepper, 500 grams of red peppers, half a head of celery, two carrots, green spices to taste.
The by-products are washed well, cut into small pieces and cooked together with celery and peeled carrots until ready. Finely chopped onions are fried in a little fat until golden, add the finely chopped red peppers and simmer until cooked. Add the offal and sprinkle with green spices.
A classic dish is the liver with onions. Ingredients: 500 grams of liver, 2 onions, frying oil. Finely chop the onion and fry until golden. Remove with a slotted spoon and place in a large plate.
Fry the liver, cut into thin pieces, in the remaining fat. Serve sprinkled with fried onions.
A stewed heart is a real delicacy. Ingredients: 500 grams of heart, 100 grams of bacon, 2 carrots, half a head of celery, salt, pepper, 1 tablespoon of tomato paste, 1 tablespoon of flour, 100 milliliters of liquid cream.
The heart is washed and the blood vessels are removed. Incisions are made and bacon strips are inserted into them. Fry the heart on all sides in heated fat. Sprinkle with spices, add tomato paste and finely chopped carrots and celery, add two cups of warm water and simmer under a lid until soft. Finally, add the flour mixed with warm water and add the cream to the finished dish. Remove from the heat and serve.
