Doria is a traditional Japanese dish of the rice casserole variety with a creamy white sauce. At first glance, it may look a lot more like Ogreten than any Japanese dish. However, Doria was created in Japan and is a very popular dish, loved by both children and teenagers and adults.
When was Doria created?
Doria was invented by a Swiss chef named Sally Vale, who worked in a restaurant located in a hotel called Yokohama New Grand in Japan in the 1930s. In other words, it's a Japanese-style Western food. When I heard about this dish, at first I thought that Doria is an Italian dish, but obviously it is not!
The original version of Doria is usually a risotto covered with bechamel sauce and baked in the oven. Doria has often been served for years in many old-fashioned cafes called Kisaten, whose menus also include dishes such as Ogreten from pasta and Spaghetti Neapolitan.
This is the favorite food of students who go to Kisaten after school, or for workers who go out for lunch. Before the massive food chains and mass cafes distracted, in the cities of Japan the culture of Sour together with Doria it flourished in the 70s and 80s of the 20th century.
Today, Doria is still a popular and main dish in many places, and the specialty is often offered in family restaurants. This dish can be eaten both for lunch and dinner.
Preparation of Doria
There are many Doria's recipes, but not all for the same or correct. Some use only steamed rice with a creamy sauce, others use Pilaf. In this rice dish instead of seafood you can use chicken or minced beef.
You can experiment with what you like when you do it at home. The cheese can be replaced with mozzarella, parmesan or another type of cheese or yellow cheese of your choice.
