As a true Mediterranean country, Spain is famous for its delicious recipes for fish and seafood. This is not strange, as the Spaniards are their largest consumer in Europe.

However, squid, which are considered to be one of the most delicious and tender molluscs, remain very popular. They are usually prepared shredded and fried or breaded, but can also be stuffed with various fillings.

They are served both as a stand-alone main dish and in the form of typical Spanish appetizers, known as tapas.

We have decided to introduce you to a not so well-known recipe for the preparation of squid, which is very popular in Spain. This is a salad, not a main course, as it is something more unconventional and would impress your family and friends if you decide to surprise them with Spanish cuisine.

Necessary products: 750 g small squid, 240 ml olive oil, 2 cloves garlic, 2 tablespoons tarragon, a few sprigs of different salads (you can choose purple lettuce, arugula, chicory, plain curly lettuce, iceberg or whatever you want), a few sprigs of fresh parsley.

Method of preparation: Wash the squid well, separate the head and all unnecessary parts for cooking. Dry them with kitchen paper and without cutting them (if they are really small squid) fry them in half of olive oil until pink.

Then transfer them to a small pan and bake for 15-20 minutes. Separately crush the parsley and garlic together with a few tablespoons of olive oil in a mortar or use a blender. Sprinkle the squid with this mixture, mix them lightly and wait for them to cool.

All the salads you have chosen are chopped by hand and placed in a bowl. From the remaining olive oil, tarragon and salt to taste, mix a homogeneous dressing.

Pour the squid on the green salads, add the sauce they have released and the dressing. Mix well and serve. Optionally, you can add 1 small dried hot pepper, as well as croutons.
