The origin of the word is Persian-Turkish, as according to original recipes in the Middle East tahini sauce was used in the preparation, and in Turkey they change the recipe and instead of tahini they crush walnuts in tarator bowls. This is the main reason to believe that the Bulgarians borrowed the recipe from neighboring Turkey.
Before 1944, cold, sour soup with cucumbers and walnuts was considered tarator in Bulgaria, and the acidity did not come from yogurt, but from plain water dissolved in vinegar. It was not until 1956 that a recipe that closely resembled appeared in The Book of the Housewife today's tarator and it is since then that more people have tasted this dish already prepared with yoghurt.
Today, master chefs are making interesting attempts to change and make the recipe more interesting, so if you are not a traditionalist, you can search the Internet for innovative ideas related to tarator and you will probably be surprised by the interpretations on this topic.
However, the classic has hundreds of followers and invariably remains among the most sought after foods in the summer heat.
