The question of the origin of the Shopska salad. The first attempts to prepare this much-liked Bulgarian recipe are not in ancient, shrouded in the mists of history centuries, but almost in modern times.

Towards the middle of the last century a salad was created to present the Bulgarian culinary art. The fragile age of this wonderful and so Bulgarian salad is due to the historical conditions in Bulgaria. The very history of nutrition in our lands suggests that this recipe could not have appeared earlier, because until the early twentieth century, the attitude of the producers of ingredients to red tomatoes was not good.
Green tomatoes were mainly used for food, and red tomatoes were intended for pet food, as red tomatoes were considered unsuitable, even poisonous. The explanation is that at that time it was cooked mainly in metal dishes, and the acid from the tomatoes when interacting with the dishes caused digestive problems, even mild poisoning.
The name of the salad is also an interesting question. It is not known who and why called the salad Shopska. It cannot be an innovative creation of completely conservative people like the shoppers. One of the assumptions is that white clothes, especially the white hat, typical of the folk costume of the shoppers, evoked associations with the white brined cheese on the salad and hence the name.
