The Spaniards are the largest consumer of fish and seafood in all of Europe. Their ships cross almost all the nearby seas and the Atlantic Ocean, even reaching African waters. It is no coincidence that after the 18th century, Galicia became a center of fishing in Europe. Then there settled thousands of Spaniards from different parts of the country, who decided to try their luck with fishing. The consequence of this is the construction of the port of Vigo, which continues to be among the most crowded in the world today.

Given all that has been said so far, it is not surprising that the Spanish recipes for cooking fish dishes are countless. A real classic, however, is the soup made from cod, which is consumed in all parts of Spain.

Necessary products for 4 people: 600 g cod, 6 potatoes, 2 tsp. red pepper, 6 tbsp. olive oil, 6 slices of stale bread, salt and pepper to taste, a few sprigs of parsley

Method of preparation: Wash the fish well, put it in a saucepan and pour cold water over it. It is left to stand in the vessel for 24 hours and every 7 hours its water is discarded and replaced with a new one, but still cold. After the allotted time, the fish is transferred to a clean container, refilled with water and brought to a boil. When it is ready, it is removed from the pot, deboned and its skin is removed.

The fish broth is filtered but not discarded. Add the peeled and diced potatoes and cook until soft. When they are ready, the cod, which is also cut into pieces, is added to the potatoes. Red pepper, salt and pepper to taste are added to the fish soup.

Separately, slices of bread cut into cubes and fry until golden in olive oil. If you are not interested in frying, you can pour them into a bowl with olive oil, mix them well and bake them in the oven. Whichever option you choose, it is good for the ready-made breads to stay for a while on kitchen paper to drain.

Ready Spanish fish soup pour into bowls, add the croutons and sprinkle each portion with parsley.
