The traditional food of the Bulgarian contains products of plant and animal origin in raw or processed state. Bread and salt have always been present on the Bulgarian table, but in older times we can find some interesting sweet things. Chronologically, it is difficult to say when confectionery has been a craft in our country, but it is known that after the Liberation, sugar beet was grown here in some areas. This is the raw material for making sugar and confectionery.
The production technology has changed slightly, but the end result has been the same. 1 kilogram of sugar was added to 1 liter of water. After boiling this sugar syrup, 1 tablespoon of vinegar was poured and the syrup was allowed to thicken.
The way it was known in the past whether the syrup was ready was quite curious. The master dipped his fingers in cold water, then in hot syrup and immediately again in cold water. If a crystalline mass forms on the fingers, the syrup is ready for further processing.
The finished syrup, in the form of a thick paste, was poured on a marble slab pre-greased with oil or olive oil and immediately began to knead it by hand. The process was very fast because the sugar dough hardened quickly. A small part was separated from the dough, in which harmless cooking paint was placed - red, yellow, green, and the apprentice continued to knead until the dough became the appropriate color.
Once the two tests were ready, they separated and twisted into a rope. To make candies, the master used scissors with which he cut the dough into sticks or figures - bracelets, pipes and others.
To make sugar roosters, a mold greased with oil was used so that the rooster would not stick. Then the master shaped the rooster itself with scissors.

The oldest recipe for homemade peiner sugar is kept in Graovo. According to the recipe, the same sweet temptation was produced at home, but the technology was a little different.
According to the recipe, 1 kg of sugar and 1 spoon of cremator were added to 500 ml of water. The mixture was put on fire and baked until a thick yellowish paste. She poured and fought.
